TUNA VEGETABLE CASSEROLE

1 can tuna, drained

8 cooked or canned white onions

1 c. cooked peas

2 chicken bouillon cubes

1 c. boiling water

2 tbsp. flour

1/4 c. cold water

In a 1 quart casserole dish, arrange first 3 ingredients. Stir bouillon cubes into boiling water and thicken with a paste of flour and cold water, blended. Pour over mixture in casserole dish. Bake in hot oven (400 degrees) 15 minutes, or until hot and bubbly. Serves 4.

QUICK CLAM CHOWDER

1 Large potato, peeled and cut in cubes

4 cups water

1/2 cup canned tomatoes

1 small onion chopped

1/2 tsp thyme

Few celery leaves, chopped

Pepper and garlic powder to taste

1 small can minced clams

1 can vegetarian vegetable soup

1 tbsp. butter

Combine all but last 3 ingredients and boil until potato cubes are done. Add clams, soup and butter and simmer for a few more minutes. More water may be added if desired.

POPPY SEE DRESSING

2 cups vinegar

4 cups sugar

8 cups salad oil

8 tsp. dry mustard

8 tsp. salt

5 tsp. poppy seeds

2 medium onions, grated fine

Blend all ingredients slowly and well. This makes a large amount. May be done in half.

TUNA/MACARONI CASSEROLE

3/4 lb elbow macaroni

1/2 cup American pasteurized cheese

1/4 cup white onions, chopped fine

1 can cream of mushroom or

celery soup undiluted

1 can tuns fish, drained

Salt, pepper to taste Cook macaroni until tender. Drain and rinse. Dice cheese, combine with soup, onions and tuna in a medium size casserole. Add macaroni and mix well. Pats of butter or margarine may be put on top if desired. Bake at 325 degree for about 45 minutes, or until slightly brown.

Return to the top.



PARMESAN POTATOES

1/4 cup butter

1/2 tsp salt

1/4 tsp pepper

3 medium baking potatoes - washed,

  unpeeled, cut into 1/8 inch slices

4 tbsp grated Parmesan cheese

Heat oven to 350 degrees.

Melt butter in a 12 by 8 baking dish in the oven.

Stir in salt and pepper. Add potatoes and stir until coated with butter. Cover with foil and bake for 30 minutes. Remove foil, sprinkle wit parmesan cheese and continue baking, uncovered, for 20-30 minutes, or until potatoes are crispy tender.

CORN CASSEROLE

1 stick margarine, melted

1 box cornbread muffin mix

1 can cream style corn

2 eggs

1 cup sour cream

1 cut whole kernel corn (drained)

Mix all ingredients together and bake in a 2 quart casserole for 35 minutes at 350 degrees. The last 15 minutes, sprinkle with cheese.

TUNA ITALIANO

1/2 cup chopped onion

2 tbsp margarine

1/4 tsp crushed oregano

1 can cream of mushroom soup (undiluted)

2 cups cooked macaroni

1/2 cup chopped canned tomatoes

1 can tuna - drained

Cook onion in margarine until tender. Blend in soup. Add rest of ingredients and heat. Serve with Parmesan cheese sprinkled on top if desired.

VEGETABLE CHEESE TART

3 eggs, beaten

2 cups half and half

2 cups shredded Swiss cheese

1 package Knorr vegetable soup mix

1 package (10 oz) frozen spinach, thawed and well drained.

1 unbaked 9 inch pie shell

Mix together the first 5 ingredients. Spoon mixture into pie shell and bake at 375 degrees for 45 min. or until knife inserted in center comes out clean.

HOME MADE MACARONI & CHEESE

INGREDIENTS

6 ounces elbow macaroni (1 1/2 cups)

3 tablespoons of butter or margarine

1/4 finely chopped onion

2 tablespoons all-purpose flour

1/2 tsp. salt

dash of pepper

2 cups buttermilk

2 cups cubed sharp cheese

INSTRUCTIONS

Cook Macaroni according to the package directions; drain. For cheese sauce, in a saucepan

melt butter or margarine. Cook onion in butter till tender but not brown. Stir in the flour, salt, and

pepper. Add buttermilk at once; cook and stir till thickened and bubbly. Cook and stir 1 to 2

minutes more. Add cubed cheese; stir till melted.

Stir macaroni into cheese sauce. Turn into a 1 1/2 quart casserole. Bake in a 350% oven 30 or

35 minutes or till heated through.
